Aluminium is lightweight, an excellent heat conductor, and economical. Hard-anodised aluminium is significantly stronger, scratch-resistant, and does not react with food. Ideal for pressure cookers, kadais, and large cooking vessels. Avoid storing acidic foods (tamarind, tomatoes) in plain aluminium for extended periods. Grade 3003 alloy is harder and better for cookware.
